Whiskey JYPSI Legacy Batch No. 003: “The Declaration” commemorates the 250th anniversary of the Declaration of Independence. This release revives and reimagines a Colonial-era Maryland-style rye mash bill — crafted with aged spirits from three distinct origins and finished in barrels that connect directly to George Washington’s historic Mount Vernon Distillery.

The artfully designed gift tube celebrates American freedom and reinvention, featuring rich colonial iconography, historical references, and subtle nods to the lore of our land. A true collector’s piece for whiskey lovers and history buffs alike.


Inside the Blend

A meticulous construction of three distinct components, bottled at 115.74 proof:

60% Rye – 8–12-year-old 95/5 rye sourced from Indiana, delivering foundational spice, maturity, and classic rye character.

30% Corn – 20–25-year-old Canadian corn whiskey, re-barreled in new American oak for 2.5 years to add depth, vanilla, and cocoa notes.

10% Malt – 8-year-old American single malt from Virginia, adding a floral, biscuit-forward aromatic lift.

“The Declaration” is a layered expression of American whiskey’s past and future — a thoughtful commemoration built from aged whiskeys, historical reconstruction, and craftsmanship that bridges centuries.


Tasting Notes

Aroma:

Baking spice (cinnamon, clove, nutmeg), seasoned oak, green apple, dried apricot, honeycomb, leather, tobacco leaf, toasted walnut, and brown sugar.

Flavor:

Balanced spice with notes of caramel, butterscotch, Tellicherry pepper, chocolate shavings, anise seed, baked pear, candied ginger, and light molasses.

Mouthfeel:

Rich and structured, with both weight and brightness.

Finish:
